Gluten-free Wookie Cookies

Yes, I’m a Star Wars fan. So when I saw the Wookie Cookie biscuit mix with cookie cutter I had to buy it, even though I couldn’t use the mix. So I made my own recipe especially to use the new cookie cutters.


Here is the gluten-free, dairy-free thermomix recipe (or you can use a food processor)

WARNING – this is healthy and easy!


95 grams dairy-free chocolate
80 grams dates
130 grams Nuttelex
40 grams sugar or other healthy alternative (organic honey, Natvia etc)
45 grams psyllium husk
150 grams almond meal
1 tsp vanilla essence
1 egg

  1. Pre-heat over to 160 degrees (fan-forced oven)
  2. Add chocolate and dates to thermomix, chop on Speed 7 for 10 seconds
  3. Add all the other ingredients and blend on Reverse, Speed 4 for 20 seconds
  4. Check if you need to scrape down the sides and blend again until well combined
  5. Roll into balls and flatten with fingers OR use a cookie cutter of your choice
  6. Bake for approx 18 minutes until they smell cooked (they will not go hard as they are a bit chewey)
  7. Allow to cool on a rack before eating


  • add a tablespoon of golden pea or brown rice protein powder
  • no almond meal? try normal gluten-free plain flour
  • if you’re not a big date fan, use less and add more chocolate
