If you have trouble convincing your kids to eat veges, then you’re going to love this quiche with three veges – enoki mushrooms, cauliflower and zucchini.
1. Preheat oven to 180c
20g enoki mushrooms
2 tbs gluten-free plain flour
Chicken Stock OR Herbamare OR salt’n’pepper
2. Add enoki, zucchini and cauliflower to bowl and blitz on Speed 5
3. Add ham and blitz on Speed 3
4. Add all other ingredients, use Reverse function on Speed 4 until combined
5. Pour egg mix into quiche dish and pop into oven for about 15 to 20 minutes
(cooking time is dependant on your oven, or if you’ve added extra eggs)
Optional extras to mix in at step 4 –
- grated cheese
- chopped baby kale
- whatever your kids love!
NB. My kids can’t eat onion, leek or garlic so to boost the flavour I use half a teaspoon of Continental Chicken Stock
