Biscuits are not my forte. I have tried many recipes and my kids just won’t eat them. However, I tried a biscuit made by my second cousin, Anthony, and it was delicious. So I asked for the recipe and I’ve converted it to suit our family’s dietary needs.
This recipe is dairy free, gluten free*, and egg free.
1. Pre-heat oven to 180 degrees (for a fan-forced oven)
2. Add the following ingredients to Thermomix or food processor and blitz until combined
150g almond meal
70g ready-to-go oats*
15g vegan protein powder
55g sugar**
75g nuttelex
1 tbs of organic honey
1 tbs vanilla essence
1 tbs rice milk
1/2 tsp cinnamon
1/2 tsp Biohawk Bake Aid
3. Shape into balls and flatten onto tray. Bake for 15 minutes or until golden.
* Not all oats are gluten free and some would argue that oats aren’t safe to eat for those with a gluten intolerance. I react to about two thirds of oats which is why I add Biohawk’s Bake Aid. This product cuts open the proline-rich protein membrane allowing it to be digested without causing inflammation.
** Although I don’t usually bake with sugar I used a combintation of Natvia and raw sugar. Otherwise I would use rapadura or coconut sugar.
Anthony may not be my kids uncle, but it’s easier for them to say ‘Uncle Bill’ than ‘my mum’s second cousin Anthony’.
